I've "fancied-up" this potluck classic by giving it lots of extra flavor while still keeping it quick and easy to prepare.
This is a short one. First, put some broccoli, a little onion, carrots, grapes and apples into a bowl.
Then, add a kick to some vegan mayo with agave, lemon juice and black pepper. Mix the dressing in with the fruits and veggies. Throw in some sunflower seeds and bacon bits to give it a salty crunch. Pack it up and you're good to go!
Deluxe Broccoli Salad
Serves 4 as a main dish or 8 as a side
1 large head broccoli, broken into bite-sized florets
1/2 cup finely chopped red onion
3 small carrots, grated
1 cup red grapes, halved
1 small red apple, cored and diced
1 cup vegan mayonnaise
1 1/2 tablespoons agave nectar
2 tablespoons freshly squeezed lemon juice
freshly ground black pepper to taste
1/2 cup bacon bits
2 tablespoons shelled sunflower seeds
- Combine broccoli, onion, carrots, grapes and apples in an extra large bowl.
- Whisk together vegan mayonnaise, agave nectar, lemon juice and black pepper in a small bowl and pour over vegetables and fruit. Mix well. Stir in bacon bits and sunflower seeds. Serve cold.
